Calasparra is in the foothills of the Sierra del Molino, with at its feet the wide rice plain for which it is famous, particularly the “bomba” type which is perfect for paella.
The town’s population of little more than 10,000 citizens has maintained that steady number since the 1940s, meaning no rapid changes or expansions broought on by tourism or new industry.
Currently, only 10% of the town is made up of foreign nationals, giving the area a traditonal Spanish feel.
Rice is the quintessential product of Calasparra and, along with that from the Ebro delta and rice from Valencia, they are the only three Spanish rice crops with a designation of origin.
The Calasparra ‘standard’ was recognized in 1986, although rice cultivation in the area dates back to the 18th century.
This variety of rice requires a greater amount of water and a longer cooking time, so the grain swells more and the other flavors become more infused. It is harvested between October and November.
